Ingredients

  • 4 large egg whites
  • 2 tablespoons unsweetened almond milk
  • 1 cup baby spinach
  • 1 cup mushrooms
  • 1 second of spray olive oil cooking spray
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons garlic powder

Directions

Step 1

In a medium mixing bowl, whisk together the egg whites and unsweetened almond milk until frothy. Add salt, black pepper, and garlic powder for seasoning, and whisk briefly to combine.

Step 2

Heat a nonstick skillet over medium-low heat and lightly coat it with olive oil cooking spray.

Step 3

Add the sliced mushrooms to the skillet and sauté for 3-4 minutes or until softened. Then add the baby spinach to the skillet and cook for another 1-2 minutes until wilted. Remove the sautéed vegetables from the skillet and set aside.

Step 4

Pour the egg white mixture into the skillet, tilting the pan to make sure the mixture spreads evenly to cover the bottom.

Step 5

Cook the egg whites gently for 2-3 minutes, or until they are mostly set. Use a spatula to gently lift the edges to let any uncooked egg flow underneath.

Step 6

Once the egg white layer is nearly cooked through, evenly distribute the sautéed mushroom and spinach mixture over one half of the omelette.

Step 7

Carefully fold the other half of the omelette over the filling using a spatula. Press down gently and cook for an additional 1-2 minutes to ensure it is heated through.

Step 8

Slide the omelette onto a plate, cut in half if desired, and serve hot.
