Ingredients

  • 100 grams unsalted butter
  • 100 grams light brown sugar
  • 6 pieces pineapple slices (canned, drained or fresh)
  • 6 pieces maraschino cherries
  • 180 grams all-purpose flour
  • 150 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 115 grams unsalted butter (softened)
  • 120 milliliters whole milk
  • 1 teaspoon vanilla extract
  • 2 pieces large eggs

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round cake pan generously with butter.

Step 2

In a small saucepan, melt 100 grams of butter over medium heat. Once melted, stir in the light brown sugar and cook until dissolved and bubbly. Pour the mixture into the prepared cake pan, spreading it evenly across the bottom.

Step 3

Arrange the pineapple slices over the sugar mixture in the pan, forming a single layer. Place a maraschino cherry in the center of each pineapple slice.

Step 4

In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 5

Add the softened butter, milk, and vanilla extract to the dry ingredients. Using an electric mixer, beat on low speed until the mixture is combined, then increase to medium speed and beat for 2 minutes.

Step 6

Add the eggs, one at a time, beating well after each addition until the batter is smooth.

Step 7

Pour the batter over the pineapple and cherries in the pan, spreading it out evenly.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick or cake tester inserted into the center comes out clean.

Step 9

Let the cake cool in the pan for 10 minutes. Run a knife along the edge of the pan to loosen the cake, then carefully invert it onto a serving plate. Allow any caramel topping left in the pan to drizzle over the cake.

Step 10

Serve warm or at room temperature. Enjoy the buttery, tropical flavors of Nickey's Pineapple Upside Down Cake!
