  • 500 grams lamb mince (ground lamb)
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 250 milliliters beef stock
  • 1 teaspoon fresh rosemary, finely chopped
  • 150 grams frozen peas
  • 750 grams kumara (orange sweet potatoes), peeled and cubed
  • 50 milliliters milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 50 grams grated cheese (optional topping)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and celery. Cook for 5 minutes until soft and slightly golden.

Increase the heat to medium-high and add the lamb mince. Cook, breaking it up with a wooden spoon, until browned evenly.

Stir in the tomato paste and Worcestershire sauce. Cook for 2 minutes to deepen the flavor.

Sprinkle the flour over the mixture and stir well to coat. Gradually add the beef stock while stirring, ensuring no lumps form. Bring the mixture to a gentle simmer.
