Ingredients

  • 2 tablespoons olive oil
  • 2 medium yellow onion

  • 1 teaspoon balsamic vinegar
  • 300 grams New Zealand beef mince
  • 2 cloves garlic cloves, minced
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt
  • 150 grams goat's cheese
  • 2 sheets puff pastry sheets
  • 1 large egg, beaten
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

Heat 1 tablespoon of olive oil in a frying pan over medium heat. Slice the onions thinly and add them to the pan. Cook for 8-10 minutes, stirring occasionally, until softened.

Step 3

Sprinkle the onions with brown sugar and balsamic vinegar. Cook for an additional 5-6 minutes until caramelized. Remove from the pan and set aside.

Step 4

Heat the remaining tablespoon of olive oil in the same pan and add the New Zealand beef mince. Break it apart with a spoon and cook for 5-6 minutes until browned.
