Ingredients

  • 120 grams All-purpose flour
  • 300 milliliters Milk
  • 3 Eggs
  • 30 grams Unsalted butter (melted)
  • 15 grams Sugar
  • 5 milliliters Vanilla extract
  • 1 teaspoon Orange zest
  • 80 milliliters Maple syrup
  • 60 milliliters Fresh orange juice
  • 15 grams Unsalted butter (for sauce)
  • 10 grams Powdered sugar (optional, for garnish)
  • 4 Fresh orange slices (optional, for serving)

Directions

Step 1

In a large mixing bowl, whisk together the flour, sugar, and orange zest.

Step 2

In another bowl, beat the eggs, then add the milk, melted butter, and vanilla extract. Mix well.

Step 3

Gradually pour the wet ingredients into the dry ingredients, whisking continuously until you get a smooth, lump-free batter. Let the batter rest for 10 minutes.

Step 4

While the batter is resting, prepare the maple-orange sauce. In a small saucepan over medium heat, combine the maple syrup, orange juice, and butter. Stir until the butter melts and the sauce is smooth. Remove from heat and set aside.

Step 5

Heat a non-stick skillet or crêpe pan over medium heat. Lightly grease the pan with a small amount of butter or oil.

Step 6

Pour a ladleful of batter (about 60 milliliters) into the center of the pan, tilting it in a circular motion to evenly coat the bottom of the pan.

Step 7

Cook the crêpe for 1-2 minutes, or until the edges begin to lift and the underside is golden brown. Flip the crêpe using a spatula and cook for an additional 30 seconds to 1 minute. Transfer to a plate and repeat with the remaining batter, stacking the crêpes as you go.

Step 8

To serve, drizzle the warm maple-orange sauce over the crêpes. Dust with powdered sugar and garnish with fresh orange slices if desired.

Step 9

Enjoy your New Zealand-inspired maple and orange crêpes!
