Ingredients

  • 4 large Russet potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 0.25 cups All-purpose flour
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Baking powder
  • 1 cups Vegetable oil (for frying)
  • 0 Sour cream or applesauce (optional for serving)

Directions

Step 1

Peel the russet potatoes and grate them using a box grater or food processor. Transfer the grated potatoes into a clean kitchen towel and squeeze out as much liquid as possible.

Step 2

Grate the yellow onion and combine it with the grated potatoes in a large mixing bowl.

Step 3

In the same bowl, add the eggs, all-purpose flour, salt, black pepper, and baking powder. Mix well until all the ingredients are evenly incorporated.

Step 4

Heat the vegetable oil in a large skillet over medium-high heat until shimmering (around 350°F). Use enough oil to create a shallow fry, about 1/4 inch deep.

Step 5

Using a heaping tablespoon or a 1/4 cup measuring cup, scoop the potato mixture and shape it into a patty. Carefully place each latke into the hot oil, working in batches to avoid overcrowding the pan.

Step 6

Fry the latkes for 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spatula to transfer the cooked latkes to a plate lined with paper towels to drain excess oil.

Step 7

Repeat with the remaining batter, adding more oil to the pan if necessary and allowing it to heat up before each batch.

Step 8

Serve the latkes warm with sour cream, applesauce, or your favorite toppings. Enjoy!
