Ingredients

  • 3 pounds pork shoulder (boneless or bone-in)
  • 32 ounces sauerkraut (rinsed and drained)
  • 1 large onion (sliced)
  • 1 medium apple (peeled, cored, and diced)
  • 3 cloves garlic (minced)
  • 2 cups chicken broth
  • 2 tablespoons brown sugar
  • 1 teaspoon caraway seeds
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.

Step 3

Pat the pork shoulder dry with paper towels and season it on all sides with salt and black pepper.

Step 4

Sear the pork shoulder in the hot oil until browned on all sides, about 3-4 minutes per side. Remove the pork from the pot and set it aside.

Step 5

In the same pot, reduce the heat to medium and add the sliced onions and garlic. Sauté until the onions are translucent, about 5 minutes.

Step 6

Stir in the diced apple, sauerkraut, chicken broth, brown sugar, and caraway seeds. Mix well.

Step 7

Nestle the seared pork shoulder into the sauerkraut mixture, ensuring the pork is partially submerged.

Step 8

Cover the pot with a lid and transfer it to the preheated oven. Cook for 3.5 to 4 hours, or until the pork is tender and easily pulls apart with a fork.

Step 9

Check the dish halfway through cooking to ensure there is enough liquid. If it looks dry, add a bit more chicken broth.

Step 10

Once done, remove the pot from the oven and let the pork rest for 10 minutes.

Step 11

Shred the pork into large chunks and mix it back into the sauerkraut, or serve in slices with the sauerkraut on the side.

Step 12

Serve warm with mashed potatoes or crusty bread for a complete meal.
