Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion (diced)
  • 1 medium bell pepper (diced, any color)
  • 3 cloves garlic (minced)
  • 1 pound ground beef
  • 1 pound ground pork
  • 28 ounces canned diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 15 ounces canned red kidney beans (rinsed and drained)
  • 15 ounces canned black beans (rinsed and drained)
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon brown sugar
  • 1 to taste optional toppings (sour cream, shredded cheese, chopped green onions, jalapeño slices, etc.)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion and bell pepper to the pot, and sauté for 4-5 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef and ground pork to the pot. Cook, breaking the meat apart with a wooden spoon, until browned and fully cooked. Drain any excess grease if necessary.

Step 5

Add the canned diced tomatoes with their juices, tomato paste, kidney beans, black beans, and beef broth to the pot. Stir well to combine.

Step 6

Stir in the chili powder, cumin, smoked paprika, dried oregano, cayenne pepper, salt, black pepper, and brown sugar. Mix thoroughly.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Taste the chili and adjust seasoning as needed. If you'd like a spicier kick, add an extra pinch of cayenne pepper or some diced jalapeños.

Step 9

Serve hot in bowls, and let each person customize their portion with the optional toppings of their choice.
