Ingredients

  • 12 oz Fettuccine pasta
  • 2 pieces Chicken breast
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Olive oil
  • 4 tbsp Unsalted butter
  • 3 pieces Garlic cloves, minced
  • 2 cups Heavy cream
  • 1.5 cups Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.

Step 2

Season the chicken breasts on both sides with 1/2 tsp salt and 1/4 tsp ground black pepper.

Step 3

In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side or until golden brown and fully cooked (internal temperature of 165°F/75°C). Remove from the skillet and let rest for 5 minutes before slicing into strips.

Step 4

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Slowly pour in the heavy cream, stirring constantly. Lower the heat to medium-low and let the cream simmer for 3-4 minutes without boiling.

Stir in the grated Parmesan cheese and let it melt into the sauce. Continue to simmer, stirring occasionally, until the sauce thickens, about 5 minutes.

Season the sauce with the remaining 1/2 tsp salt and 1/4 tsp ground black pepper. Taste and adjust seasoning if necessary.
