Ingredients

  • 1 tablespoon olive oil
  • 0.5 pound ground pork sausage (spicy or mild)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • 1 can black-eyed peas, drained and rinsed
  • 8 ounces cream cheese, softened
  • 0.5 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 2 cups Tuscan kale, stems removed and leaves chopped
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 stalks green onions, thinly sliced (for garnish)
  • 1 package tortilla chips or crusty bread (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes.

Step 3

Add the diced onion to the skillet and sauté until soft and translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Stir in the black-eyed peas, mashing some of them with the back of a spoon to create a creamier texture. Reduce heat to low.

Step 5

Add the softened cream cheese and sour cream to the skillet, stirring until fully incorporated. Fold in the shredded cheddar cheese and mix until melted and smooth.

Step 6

Stir in the chopped kale, smoked paprika, crushed red pepper flakes, salt, and ground black pepper. Cook for 2-3 minutes until the kale wilts slightly and everything is well combined.

Step 7

Transfer the mixture to an oven-safe baking dish and smooth the top. Bake in the preheated oven for 15-18 minutes, or until the dip is hot and bubbling.

Step 8

Remove the dish from the oven and let the dip cool slightly before garnishing with sliced green onions.

Step 9

Serve warm with tortilla chips or crusty bread for dipping. Enjoy your New Year's celebration with this delicious and festive dish!
