Ingredients

  • 1 pound beef tenderloin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces cremini mushrooms
  • 2 cups fresh spinach
  • 2 cloves garlic cloves
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons Dijon mustard
  • 1 sheet puff pastry sheet
  • 1 yolk egg yolk
  • 1 tablespoon water
  • 1 tablespoon all-purpose flour (for rolling)

Directions

Step 1

Season the beef tenderloin with salt and pepper on all sides.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the beef for 1-2 minutes on each side until browned. Remove from heat and set aside to cool.

Step 3

In the same skillet, melt the butter over medium heat. Add chopped mushrooms, spinach, minced garlic, and thyme. Cook until the mixture is soft and most of the liquid has evaporated, about 5-7 minutes. Set aside to cool.

Step 4

Roll out the puff pastry on a lightly floured surface until large enough to wrap around the beef.

Step 5

Spread a thin layer of Dijon mustard over the cooled beef tenderloin.

Step 6

Spread the cooled mushroom and spinach mixture evenly over the puff pastry, leaving a small border around the edges.

Step 7

Place the beef on top of the mushroom-spinach filling. Carefully wrap the puff pastry around the beef, sealing the edges by pinching or tucking. Ensure the seam is on the bottom.

Step 8

Place the wrapped beef on a baking sheet lined with parchment paper.

Step 9

Whisk together the egg yolk and water to create an egg wash. Brush the surface of the puff pastry with the egg wash for a golden finish.

Step 10

Preheat your oven to 400°F (200°C). Transfer the baking sheet to the oven and bake for 30-35 minutes, or until the puff pastry is golden brown and the beef is cooked to your desired doneness.

Step 11

Remove from the oven and let rest for 5-10 minutes before slicing into thick pieces.

Step 12

Serve warm with your favorite side dishes and enjoy your New Wellington!
