Ingredients

  • 600 grams new potatoes
  • 60 grams unsalted butter
  • 2 large shallots
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Rinse the new potatoes thoroughly under cold water to remove any dirt. Cut any larger potatoes in half to ensure even cooking, leaving small ones whole.

Step 2

Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over high heat, reduce to a simmer, and cook for 12-15 minutes, or until the potatoes are tender when pierced with a fork. Drain and set aside.

Step 3

While the potatoes are cooking, finely mince the shallots.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the minced shallots and cook for 3-4 minutes, stirring occasionally, until softened and lightly golden.

Step 5

Lower the heat to medium-low, then stir in the butter until melted and combined with the shallots.

Step 6

Add the balsamic vinegar to the skillet, stirring to create a smooth sauce.

Step 7

Toss the cooked potatoes into the skillet, ensuring they are evenly coated with the balsamic-shallot butter sauce. Season with salt and black pepper to taste.

Step 8

Finely chop the fresh parsley and sprinkle it over the potatoes as a garnish just before serving.

Step 9

Serve warm as a side dish to complement roasted meats, grilled fish, or a vegetarian main course.
