Ingredients

  • 500 grams new potatoes
  • 300 grams green beans
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 units garlic cloves
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 400 grams diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash the new potatoes thoroughly and cut them into bite-sized pieces. Trim the ends of the green beans and cut them into 2-inch lengths.

Step 2

Finely dice the yellow onion and mince the garlic cloves.

Step 3

Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for 1 more minute until fragrant.

Step 5

Add the tomato paste, paprika, and dried thyme to the pot. Stir for 1-2 minutes to toast the spices and evenly coat the onion mixture.

Step 6

Pour in the vegetable broth and diced tomatoes (including their juices). Stir well to combine.

Step 7

Add the chopped potatoes into the pot and season with salt and black pepper. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15 minutes, or until the potatoes are just tender.

Step 8

Add the green beans to the pot and continue cooking for another 8-10 minutes, until the beans are tender but still crisp.

Step 9

Stir in the lemon juice for a touch of brightness, and adjust the seasoning to taste with additional salt and pepper, if needed.

Step 10

Remove the pot from the heat and garnish the stew with freshly chopped parsley before serving.

Step 11

Serve hot as a standalone dish, or alongside crusty bread or rice, if desired.
