Ingredients

  • 12 ounces Andouille sausage
  • 4 tablespoons Butter
  • 4 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 1 cup Chicken or beef stock
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoons Hot sauce
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 8 slices French bread
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Slice the Andouille sausage into small cubes or thin rounds.

Step 2

Heat a large skillet over medium heat and cook the sausage until browned and fully cooked, about 5 minutes. Remove the sausage from the skillet and set aside.

Step 3

In the same skillet, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Continue whisking for 2-3 minutes, allowing the roux to cook and develop a light golden color.

Step 4

Gradually pour in the milk and stock, whisking continuously to prevent lumps from forming. Cook for 3-5 minutes, or until the mixture thickens to a creamy consistency.

Step 5

Stir in the Cajun seasoning, hot sauce, salt, and black pepper. Adjust seasoning to taste.

Step 6

Add the cooked sausage back into the skillet, stirring to combine. Reduce heat to low and simmer for 2-3 minutes to allow the flavors to meld.

Step 7

While the sauce is simmering, toast the slices of French bread until golden and buttery.

Step 8

To serve, place 1-2 slices of toast on a plate and ladle the sausage gravy generously over the top. Garnish with chopped parsley if desired.

Step 9

Serve immediately and enjoy your New Orleans Style S.O.S.!
