  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 15-ounce can canned kidney beans, drained and rinsed
  • 1 15-ounce can canned black beans, drained and rinsed
  • 1 15-ounce can canned diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 bay leaf
  • 1.5 tablespoons creole seasoning
  • 0.25 teaspoons cayenne pepper (optional, for extra heat)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 2 cups cooked white rice (optional, for serving)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion, green bell pepper, and celery. Sauté for 5–7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for 1 more minute, until fragrant.

Step 4

Add the kidney beans, black beans, canned diced tomatoes (with their juices), and chicken or vegetable broth. Stir to combine.

Step 5

Toss in the bay leaf, creole seasoning, cayenne pepper (if using), smoked paprika, oregano, thyme, salt, and black pepper. Stir well.

Step 6

Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25 minutes, stirring occasionally.

Step 7

Remove the bay leaf before serving. Taste and adjust seasonings, adding more salt or spice as desired.

Step 8

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot, optionally over a scoop of cooked white rice for a heartier meal.
