Peel and finely grate the fresh ginger root. Set it aside.
Wash the lemons and oranges thoroughly. Using a vegetable peeler, remove the zest from 2 lemons and 1 orange, avoiding the bitter white pith. Set the zest aside. Juice all the lemons and oranges and keep the juice ready.
In a large stockpot, add the water, grated ginger, citrus zest, cinnamon stick, cloves, star anise, and golden raisins.
Bring the mixture to a boil over medium heat. Reduce the heat and simmer gently for 30 minutes to allow the flavors to infuse.
Stir in the sugar until it dissolves completely. Remove the pot from heat and let the mixture cool to lukewarm (about 37°C or 98°F).
Once cooled, add the citrus juice and sprinkle in the dry yeast. Stir well to activate the yeast.
Transfer the mixture to a sterilized fermentation container, leaving some space at the top to allow for bubbling during fermentation. Cover loosely with a fermentation airlock or a clean cloth secured with a rubber band.
Allow the wine to ferment in a warm, dark place for 7 days. Stir the mixture gently once a day with a sterilized spoon.
After 7 days, strain the liquid through a fine mesh strainer or cheesecloth into another sterilized container, discarding the solids. If desired, stir in vodka or brandy to fortify the wine.
Seal the container tightly and allow the wine to mature in a cool, dark place for 2-4 weeks to enhance the flavor.
Once matured, carefully decant the wine into sterilized bottles and seal tightly. Store the bottles in a cool, dark place.
Serve the ginger wine slightly chilled or warmed, garnished with a slice of lemon or orange if desired. Enjoy your festive holiday drink!
