Bring a large pot of water to a boil. Carefully remove 12 large leaves from the cabbage head and blanch them in boiling water for 2-3 minutes until softened. Set aside to cool.
In a large mixing bowl, combine the ground pork, ground beef, cooked rice, diced onion, minced garlic, egg, dried thyme, salt, and black pepper. Mix until well combined.
Trim the thick stem on the back of each cabbage leaf to make rolling easier.
Take one cabbage leaf, place about 2-3 tablespoons of the meat mixture in the center, fold the sides in, and roll it up tightly. Repeat with all the leaves and filling.
In a medium saucepan, combine cranberry sauce, tomato sauce, chicken broth, brown sugar, and apple cider vinegar. Heat over medium heat, whisking, until smooth and well blended, about 5 minutes.
