Ingredients

  • 2 pounds Live lobsters (or cooked lobster meat)
  • 4 tablespoons Salted butter
  • 0.25 cup Mayonnaise
  • 1 tablespoon Fresh lemon juice
  • 0.25 cup Celery (finely diced)
  • 1 tablespoon Chives (finely chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 4 Buttermilk hot dog buns
  • 1 pinch Paprika (optional, for garnish)
  • 2 tablespoons Unsalted butter (for toasting the buns)

Directions

Step 1

If using live lobsters, cook them in a large pot of salted, boiling water for 8-10 minutes per pound until the shells turn bright red. Remove from the pot and let them cool before removing the meat from the claws, tails, and knuckles. Chop the meat into bite-sized pieces. If using pre-cooked lobster meat, skip to the next step.

Step 2

In a large mixing bowl, combine the chopped lobster meat, mayonnaise, lemon juice, diced celery, chives, salt, and black pepper. Mix gently to avoid breaking up the lobster meat too much. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.

Step 3

Heat a skillet or griddle over medium heat. Spread a small amount of unsalted butter on the outsides of each buttermilk hot dog bun. Place the buns cut-side down on the skillet and toast for about 2-3 minutes per side, or until golden and crisp.

Step 4

Remove the buns from the skillet and let them cool slightly. Spoon the chilled lobster salad mixture generously into each toasted bun.

Step 5

Optional: Sprinkle a pinch of paprika over the top for a pop of color.

Step 6

Serve the lobster rolls immediately with your favorite sides, such as potato chips or coleslaw. Enjoy!
