Ingredients

  • 3 tablespoons Butter
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 4 cups Zucchini, chopped
  • 6 cups Fresh spinach leaves
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Ground nutmeg
  • 1 teaspoon Fresh thyme leaves
  • 0 Optional garnish: Crème fraîche or sour cream
  • 0 Optional garnish: Chopped fresh parsley

Directions

Step 1

In a large pot, heat the butter and olive oil over medium heat until the butter melts and starts to foam.

Step 2

Add the diced onion and cook, stirring occasionally, for about 5 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the zucchini to the pot and cook for 5–7 minutes, stirring occasionally, until the zucchini starts to soften.

Step 5

Stir in the fresh spinach leaves and cook for 2–3 minutes until they wilt down.

Step 6

Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10 minutes until the vegetables are very tender.

Step 7

Remove the pot from the heat and allow it to cool slightly. Use an immersion blender to puree the soup until smooth, or carefully transfer it in batches to a countertop blender.

Step 8

Return the pot to the heat and stir in the heavy cream. Season with salt, ground black pepper, nutmeg, and fresh thyme leaves.

Step 9

Simmer the bisque over low heat for 5–7 minutes to allow the flavors to meld together. Taste and adjust seasoning as needed.

Step 10

Ladle the bisque into bowls and garnish with a dollop of crème fraîche or sour cream and a sprinkle of chopped parsley, if desired.

Step 11

Serve hot and enjoy!
