Ingredients

  • 3 tablespoons Butter
  • 1 medium Yellow onion, diced
  • 2 stalks Celery stalks, diced
  • 3 cloves Garlic, minced
  • 2 large Russet potatoes, peeled and diced
  • 4 cups Clam juice
  • 1 cup Dry white wine
  • 1 leaf Bay leaf
  • 1 teaspoon Fresh thyme leaves
  • 2 cups Heavy cream
  • 1 pound Cod or haddock fillets, cut into 1-inch pieces
  • 1 pound Sea scallops
  • 1 pound Shrimp, peeled and deveined
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Oyster crackers, for serving (optional)

Directions

Step 1

Melt the butter in a large, heavy-bottomed pot over medium heat.

Step 2

Add the diced onion and celery, and sauté for 5-7 minutes until softened but not browned.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the diced potatoes, clam juice, dry white wine, bay leaf, and thyme to the pot.

Step 5

Bring the mixture to a boil, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.

Step 6

Remove and discard the bay leaf. Use a potato masher to lightly mash some of the potatoes in the pot to help thicken the chowder.

Step 7

Stir in the heavy cream and bring the mixture back to a gentle simmer.

Step 8

Add the cod or haddock pieces, sea scallops, and shrimp to the chowder. Cook for 5-7 minutes, or until the seafood is opaque and fully cooked through.

Step 9

Season the chowder with salt and pepper to taste.

Step 10

Sprinkle the chopped parsley over the top and serve hot, optionally accompanied by oyster crackers.
