Ingredients

  • 4 tablespoons Unsalted butter
  • 1 pound Mild Italian sausage (casings removed)
  • 1 large Yellow onion (diced)
  • 3 stalks Celery (diced)
  • 1 large Granny Smith apple (peeled, cored, and diced)
  • 1 cup Dried cranberries
  • 2 tablespoons Fresh sage (chopped)
  • 3 tablespoons Fresh parsley (chopped)
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 cups Day-old bread (cut into 1-inch cubes)
  • 2 cups Chicken or turkey stock
  • 2 Eggs (lightly beaten)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set it aside.

Step 2

In a large skillet, melt the butter over medium heat. Add the sausage and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 8-10 minutes. Transfer the sausage to a large mixing bowl, leaving any remaining fat in the skillet.

Step 3

In the same skillet, add the onion and celery. Cook for 5-6 minutes until softened. Stir in the diced apple and cook for another 3-4 minutes, until the apple begins to soften.

Step 4

Add the dried cranberries, chopped sage, parsley, thyme, salt, and pepper to the skillet. Stir everything together, cooking for 1-2 minutes until fragrant. Remove from heat and add this mixture to the bowl with the sausage.

Step 5

Add the bread cubes to the mixing bowl and toss to combine with the sausage mixture. Gradually pour in the chicken or turkey stock, tossing to evenly moisten the bread. Adjust the amount of stock to your preferred stuffing consistency.

Step 6

Stir in the beaten eggs until fully incorporated.

Step 7

Transfer the stuffing mixture to the prepared baking dish. Spread it out evenly and press it down lightly with a spoon or spatula.

Step 8

Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the top is golden and crisp.

Step 9

Allow the stuffing to cool for 5 minutes before serving warm. Enjoy this flavorful dish as a perfect accompaniment to your holiday meal!
