Ingredients

  • 1 pound dried navy beans
  • 6 cups water
  • 1 large yellow onion, diced
  • 6 slices bacon, diced
  • 0.33 cup molasses
  • 0.25 cup dark brown sugar
  • 0.25 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon ground paprika
  • 0.5 teaspoon garlic powder

Directions

Step 1

Rinse the dried navy beans under cold water, removing any debris or broken beans.

Step 2

In a large pot, bring the beans and 6 cups of water to a boil. Boil for 10 minutes, then remove from heat and let the beans soak for 1 hour. Drain and rinse the beans.

Step 3

In a skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside. Reserve 1 tablespoon of bacon drippings in the skillet.

Step 4

In the same skillet, sauté the diced onion in the bacon drippings until soft and translucent, about 5 minutes.

Step 5

In a large bowl, whisk together the molasses, brown sugar, ketchup, Dijon mustard, apple cider vinegar, salt, black pepper, paprika, and garlic powder.

Step 6

Add the soaked beans, cooked bacon, sautéed onion, and the molasses mixture to a crock pot. Stir to combine.

Step 7

Pour in enough water to cover the beans by about an inch.

Step 8

Cover the crock pot with the lid and cook on low for 8–9 hours, or until the beans are tender and the sauce has thickened. Stir occasionally and add a bit more water if needed to prevent drying out.

Step 9

Once the beans are fully cooked, taste and adjust seasoning if necessary. Serve warm and enjoy!
