Ingredients

  • 2 cans (5 oz each, drained) Canned tuna or salmon
  • 0.5 cups Plain breadcrumbs
  • 1 large Egg
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons, chopped Fresh parsley
  • 2 stalks, finely chopped Green onions
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil or vegetable oil

Directions

Step 1

In a large bowl, combine the drained tuna or salmon, breadcrumbs, egg, mayonnaise, and Dijon mustard.

Step 2

Add the chopped parsley, green onions, lemon juice, garlic powder, salt, and black pepper to the mixture. Mix well until fully combined and the mixture holds together.

Step 3

Using your hands, form the mixture into small patties about 3 inches in diameter and 1/2 inch thick. You should get 4-6 patties, depending on size.

Step 4

Heat the olive oil in a large non-stick skillet over medium heat.

Step 5

When the oil is hot, place the patties in the skillet, being careful not to overcrowd them. Cook in batches if necessary.

Step 6

Cook the patties for 4-5 minutes on each side, or until they are golden brown and crispy on the outside.

Step 7

Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 8

Serve warm with a side salad, dipping sauce of your choice, or over rice for a full meal. Garnish with additional parsley and a wedge of lemon, if desired.
