Ingredients

  • 0.75 cups unsalted butter
  • 1 cups granulated sugar
  • 0.25 cups molasses
  • 1 pieces large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoons ground ginger
  • 1 teaspoons ground cinnamon
  • 0.5 teaspoons ground cloves
  • 0.25 teaspoons salt
  • 0.25 cups granulated sugar (for rolling)

Directions

Step 1

Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the unsalted butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 3

Add the molasses and egg to the butter mixture and beat until well combined, scraping down the sides of the bowl as necessary.

Step 4

In a separate medium-sized bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Using a tablespoon or small cookie scoop, portion out the dough and roll into 1-inch balls.

Step 7

Pour the 1/4 cup granulated sugar for rolling into a shallow dish. Roll each dough ball in the sugar until fully coated.

Step 8

Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are set and the tops are cracked. For softer cookies, err on the side of 8 minutes.

Step 10

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the cookies in an airtight container at room temperature for up to one week.
