Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cup Milk
  • 2 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 pound Ground beef
  • 1 medium Yellow onion
  • 2 cloves Garlic cloves
  • 2 medium Carrots
  • 1 cup Frozen peas
  • 2 tablespoons Tomato paste
  • 0.5 cup Chicken or beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon All-purpose flour
  • 1 tablespoon Olive oil

Directions

Step 1

Peel and chop the russet potatoes into large chunks. Place them in a pot with water and a pinch of salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender.

Step 2

Drain the potatoes and return them to the pot. Add 2 tablespoons of butter, milk, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mash until smooth and set aside.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

Heat olive oil in a large skillet over medium heat. Finely dice the yellow onion, mince the garlic, and dice the carrots.

Step 5

Add the onion and carrots to the skillet. Sauté for 5 minutes until softened. Add the minced garlic and cook for another minute.

Step 6

Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon. Drain any excess fat.

Step 7

Stir in the tomato paste, flour, and Worcestershire sauce. Cook for 2-3 minutes to coat the beef in the mixture.

Step 8

Pour in the chicken or beef broth. Stir to combine and simmer for 5 minutes, allowing the mixture to thicken slightly.

Step 9

Stir in the frozen peas, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Turn off the heat.

Step 10

Transfer the beef mixture to a 9x13 inch baking dish. Spread the mashed potatoes evenly over the top, smoothing it with a spatula. Use a fork to create a textured pattern on the potatoes if desired.

Step 11

Dot the top of the potatoes with the remaining 2 tablespoons of butter.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbling.

Step 13

Let the Shepherd's Pie cool for 5-10 minutes before serving. Enjoy!
