Ingredients

  • 2.5 cups All-purpose flour
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.75 cups Unsalted butter, softened
  • 1 cups Granulated sugar
  • 0.5 cups Brown sugar, packed
  • 2 units Large eggs
  • 1.5 teaspoons Vanilla extract
  • 1 cups Candied cherries (red and green), chopped
  • 1 cups Candied pineapple, chopped
  • 0.5 cups Raisins
  • 1 cups Chopped pecans or walnuts

Directions

Step 1

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

Step 3

In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.

Step 6

Fold in the candied cherries, candied pineapple, raisins, and chopped nuts until evenly distributed throughout the dough.

Step 7

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are just golden. The centers may look slightly soft but will set as they cool.

Step 9

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Step 10

Store in an airtight container at room temperature for up to one week or in the freezer for up to three months.
