  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 cup Corn kernels, fresh or frozen
  • 15 ounces Black beans, drained and rinsed
  • 2 tablespoons Fresh cilantro, chopped
  • 4 Corn tortillas, cut into strips
  • 1 Lime, cut into wedges (for serving)
  • 1 large Avocado, diced (optional)
  • 1 cup Shredded cheddar or Monterey Jack cheese (optional)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium heat.
