Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, melted and cooled
  • 0.75 cups milk (whole or 2%)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1.5 cups fresh or frozen blueberries
  • 2 teaspoons coarse sugar for topping (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 3

In a medium mixing bowl, whisk together the melted butter, milk, vanilla extract, and eggs until well combined.

Step 4

Make a well in the center of the dry ingredients and pour the wet ingredients into it. Gently fold the mixture together with a spatula, being careful not to overmix (a few lumps are fine).

Step 5

Add the blueberries to the batter and fold them in gently to avoid bursting the berries.

Step 6

Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the tops with coarse sugar if desired for a crunchy topping.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely or serve warm.
