Ingredients

  • 1 pound Ground breakfast sausage
  • 2 stalks Leeks
  • 1 tablespoon Olive oil
  • 8 large Eggs
  • 1.5 cups Whole milk
  • 1.5 cups Cheddar cheese, shredded
  • 3 cups Day-old bread, cubed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Butter, for greasing the baking dish

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with butter and set aside.

Step 2

Clean the leeks thoroughly by slicing them lengthwise, then chopping them into thin half-moons. Rinse them under cold water to remove any dirt.

Step 3

Heat olive oil in a large skillet over medium heat. Add the ground sausage and cook, breaking it apart with a spoon, until browned and fully cooked, about 7-8 minutes. Remove the sausage from the skillet and set aside.

Step 4

In the same skillet, add the chopped leeks. Sauté them until soft and fragrant, about 5 minutes. Remove from heat and set aside.

Step 5

In a large mixing bowl, whisk together the eggs, whole milk, Dijon mustard, salt, and black pepper until well combined.

Step 6

Add the cubed bread to the bowl and toss gently to coat. Let the mixture sit for a few minutes to allow the bread to absorb the liquid.

Step 7

Stir in the cooked sausage, sautéed leeks, and 1 cup of shredded cheddar cheese into the bread mixture. Mix until evenly incorporated.

Step 8

Pour the mixture into the greased baking dish, spreading it out evenly. Sprinkle the remaining 1/2 cup of cheddar cheese on top.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for another 20 minutes, or until the top is golden and the casserole is set in the center.

Step 10

Remove the casserole from the oven and let it rest for 5-10 minutes before serving. Slice into portions and enjoy!
