Ingredients

  • 4 pieces (6 ounces each) cod fillets
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon cayenne pepper
  • 1.5 cups club soda
  • 6 cups (for frying) vegetable oil
  • 4 large russet potatoes
  • 0.5 cup malt vinegar
  • 1 teaspoon (for seasoning) sea salt

Directions

Step 1

Start by peeling the russet potatoes and slicing them into 1/4-inch thick fries. Rinse them under cold water to remove excess starch, then pat them dry with a clean kitchen towel.

Step 2

Heat the vegetable oil in a deep fryer or large pot to 325°F (163°C). Fry the potatoes in small batches for 3-4 minutes, until they are soft but not browned. Remove them from the oil and drain them on paper towels.

Step 3

Increase the oil temperature to 375°F (190°C) to prepare for the final fry of the chips later.

Step 4

While heating the oil, prepare the batter for the fish. In a large bowl, whisk together the all-purpose flour, baking powder, salt, and cayenne pepper. Gradually whisk in the club soda until the batter is smooth and has a slightly thick consistency.

Step 5

Pat the cod fillets dry with a paper towel, then lightly dust them with flour to help the batter stick.

Step 6

Dip each cod fillet into the prepared batter, ensuring it is fully coated. Let the excess batter drip off before gently lowering each fillet into the hot oil. Fry in batches for 6-8 minutes until golden brown and crispy. Remove the fish and drain on a wire rack or paper towels.

Step 7

Return the prepared fries to the hot oil at 375°F (190°C) and fry for an additional 2-3 minutes until golden and crispy. Remove and drain on paper towels.

Step 8

Serve the freshly fried fish and chips immediately, sprinkled with sea salt and a drizzle of malt vinegar for traditional flavor.
