Ingredients

  • 1 cup almond flour
  • 0.5 cup old-fashioned oats
  • 0.25 cup ground flaxseed
  • 0.25 cup shredded unsweetened coconut
  • 0.5 cup erythritol sweetener or monk fruit sweetener
  • 0.25 cup butter, melted
  • 2 tablespoons unsweetened applesauce
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.25 cup sugar-free chocolate chips (optional)
  • 0.25 cup chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the almond flour, old-fashioned oats, ground flaxseed, shredded coconut, erythritol sweetener, ground cinnamon, baking powder, and salt. Stir to mix the dry ingredients evenly.

Step 3

In a separate bowl, whisk together the melted butter, unsweetened applesauce, egg, and pure vanilla extract until well combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients, and mix until a dough forms. If desired, fold in the sugar-free chocolate chips and chopped nuts for added texture and flavor.

Step 5

Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie. Gently flatten each cookie with the back of a spoon or your fingers.

Step 6

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The cookies may look slightly soft in the center, but they will firm up as they cool.

Step 7

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Store the cookies in an airtight container at room temperature for up to 5 days, or refrigerate for up to 1 week. Enjoy these guilt-free delights!
