Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.75 cup granulated sugar
  • 0.75 cup brown sugar (packed)
  • 2 whole large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1.5 cups fresh figs (finely chopped)
  • 0.75 cup chopped walnuts (optional)
  • 2 tablespoons powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy. This should take about 3-5 minutes using an electric mixer.

Step 4

Add the eggs one at a time to the butter and sugar mixture, beating well after each addition. Stir in the vanilla extract.

Step 5

Alternately add the dry ingredients and buttermilk to the wet mixture in three additions, beginning and ending with the dry ingredients. Mix just until combined; do not overmix.

Step 6

Gently fold in the chopped figs and walnuts (if using) using a spatula until evenly distributed.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Step 10

Once cooled, dust the top of the cake with powdered sugar before serving. Slice and enjoy!
