Ingredients

  • 1 packet (2 1/4 teaspoons) Active dry yeast
  • 0.5 cup Warm water
  • 5 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Baking soda
  • 0.25 cup Granulated sugar
  • 1 teaspoon Salt
  • 1 cup Shortening (or unsalted butter, chilled)
  • 2 cups Buttermilk
  • 2 tablespoons Melted butter (for brushing tops)

Directions

Step 1

In a small bowl, dissolve the active dry yeast in warm water. Let it sit for 5-10 minutes until it becomes frothy.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, sugar, and salt.

Step 3

Using a pastry cutter or your fingers, cut the shortening (or chilled butter) into the dry ingredients until the mixture resembles coarse crumbs.

Step 4

Stir in the frothy yeast mixture and buttermilk. Mix until combined, but do not overwork the dough.

Step 5

Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat or roll the dough out to about 1/2-inch thickness.

Step 6

Use a round biscuit cutter (about 2-3 inches in diameter) to cut out biscuits. Place them on a greased or parchment-lined baking sheet, spacing them about 1 inch apart.

Step 7

Cover the baking sheet loosely with a clean kitchen towel and let the biscuits rise in a warm place for about 30 minutes.

Step 8

Preheat your oven to 400°F (200°C).

Step 9

After the biscuits have risen, bake them in the preheated oven for 12-15 minutes, or until they are golden brown on top.

Step 10

Brush the tops of the hot biscuits with melted butter and serve warm.
