Ingredients

  • 3 whole (ripe) nectarines
  • 1 medium red bell pepper
  • 0.25 medium red onion
  • 1 whole jalapeño
  • 2 tablespoons (chopped) fresh cilantro
  • 2 tablespoons lime juice
  • 0.5 teaspoons salt
  • 1 teaspoon honey (optional)

Directions

Step 1

Wash and dry all produce.

Step 2

Pit and dice the nectarines into small, evenly-sized cubes. Place them in a mixing bowl.

Step 3

Remove the stem, seeds, and membrane from the red bell pepper and dice it finely. Add it to the bowl with the nectarines.

Step 4

Finely chop 1/4 of a medium red onion and add it to the mixture.

Step 5

Deseed and finely dice the jalapeño (or leave the seeds in for extra heat), and add it to the salsa.

Step 6

Chop the fresh cilantro leaves and stir them into the mixture.

Add the lime juice, salt, and honey (if you're using it) to the bowl, and gently mix all the ingredients together until well-combined.
