In a small bowl, dissolve the active dry yeast in warm milk. Let it sit for 5-10 minutes until frothy.
In a large mixing bowl, combine the all-purpose flour, unsalted butter, sour cream, sugar, and vanilla extract. Mix until crumbly.
Add the yeast and milk mixture to the bowl. Knead the dough until it comes together into a smooth, soft ball. Cover and let it rest for 1 hour in a warm place.
While the dough is resting, prepare the filling by mixing sugar, all-purpose flour, and melted butter in a medium bowl. Stir until the mixture resembles a paste.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
After the dough has risen, divide it into 4 equal portions. Roll each portion out on a floured surface into a rectangle, about 1/4-inch thick.
