Ingredients

  • 1 cup dried corn kernels
  • 1 cup hominy (canned or cooked)
  • 6 cups water
  • 1 medium diced onion
  • 2 medium diced potatoes
  • 2 cloves garlic cloves (minced)
  • 0.5 pound boneless beef or lamb (optional, cut into bite-sized pieces)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Rinse the dried corn kernels under cold water to remove any dust or debris.

Step 2

In a large pot, combine the dried corn kernels and water. Bring the water to a boil over high heat, then reduce the heat to low and let it simmer for approximately 90 minutes, or until the corn becomes tender.

Step 3

If using meat, add the bite-sized pieces of beef or lamb to the pot after the corn has simmered for 60 minutes. Let it cook with the corn for the remaining 30 minutes.

Step 4

Once the corn is tender, add the diced onion, diced potatoes, minced garlic, and hominy to the pot. Stir well to combine.

Step 5

Season the soup with salt and black pepper. Continue cooking on low heat for another 30 minutes, stirring occasionally, until the potatoes are tender and all the flavors meld together.

Step 6

Taste the soup and adjust the seasoning if needed.

Step 7

Serve the soup hot in individual bowls. Garnish with fresh cilantro, if desired.
