Ingredients

  • 4 cups Fresh spinach
  • 14 oz Artichoke hearts (canned or jarred, drained and chopped)
  • 8 oz Cream cheese (softened)
  • 1 cup Sour cream
  • 0.5 cup Mayonnaise
  • 0.5 cup Parmesan cheese (grated)
  • 1 cup Mozzarella cheese (shredded)
  • 2 cloves Minced garlic
  • 0.25 tsp Red pepper flakes (optional, for heat)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Bring a pot of water to a boil and blanch the spinach for 1-2 minutes until wilted. Drain, rinse with cold water, and squeeze out excess moisture. Roughly chop and set aside.

Step 3

In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, Parmesan cheese, mozzarella cheese, and minced garlic. Stir until smooth and well combined.

Step 4

Add the chopped spinach and drained, chopped artichoke hearts to the cheese mixture. Mix well.

Step 5

Season with salt, black pepper, and optional red pepper flakes for a hint of heat. Adjust seasoning to taste.

Step 6

Transfer the mixture to an oven-safe baking dish and spread it out evenly.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the dip is hot and bubbly and the top is lightly golden.

Step 8

Remove the dip from the oven and let it cool slightly before serving. Serve warm with tortilla chips, crackers, or fresh baguette slices.
