  • 2 cups wheat bran
  • 1 cup buttermilk
  • 1 cup boiling water
  • 0.25 cup unsalted butter, melted
  • 0.33 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup raisins or chopped dates (optional)
  • 0.25 cup chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease or line a 12-cup muffin tin with paper liners.

In a large bowl, combine the wheat bran and boiling water. Stir well and let sit for 10 minutes to allow the bran to soften.

Step 3

Add the buttermilk, melted butter, honey, egg, and vanilla extract to the bran mixture. Whisk together until smooth and well combined.

In a separate bowl, whisk together the whole wheat flour, baking soda, and salt.

Gradually fold the dry ingredients into the wet mixture. Stir just until combined; do not overmix.

If using raisins, chopped dates, or nuts, fold them gently into the batter at this stage.
