Ingredients

  • 6 cups Yellow squash
  • 6 cups Water
  • 1 teaspoon Salt
  • 4 tablespoons Unsalted butter
  • 1 cup Yellow onion, chopped
  • 2 Eggs, beaten
  • 1 cup Sour cream
  • 1 cup Cheddar cheese, shredded
  • 1 cup Crackers, crushed (such as Ritz or saltines)
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup Breadcrumbs
  • 0.5 cup Additional cheddar cheese, shredded (for topping)
  • 2 tablespoons Butter, melted (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish and set aside.

Step 2

Slice the yellow squash into thin rounds and place them in a large pot with the water and 1 teaspoon of salt. Bring to a boil over medium-high heat and cook until the squash is tender, about 8-10 minutes.

Step 3

Drain the squash in a colander, pressing gently with a spoon to remove excess water. Set aside to cool slightly.

Step 4

In a skillet, melt 4 tablespoons of butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Step 5

In a large mixing bowl, whisk together the beaten eggs, sour cream, 1 cup of shredded cheddar cheese, ground black pepper, and the crushed crackers.

Step 6

Stir in the cooked squash and sautéed onions until evenly combined.

Step 7

Pour the mixture into the prepared casserole dish and spread it out evenly.

Step 8

In a small bowl, combine the breadcrumbs, 0.5 cup of additional cheddar cheese, and 2 tablespoons of melted butter. Sprinkle this topping evenly over the squash mixture in the casserole dish.

Step 9

Bake in the preheated oven for 30-40 minutes, or until the casserole is bubbly and golden brown on top.

Step 10

Remove from the oven and let rest for 10 minutes before serving. Enjoy!
