Ingredients

  • 1 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.25 cups old-fashioned rolled oats
  • 0.75 cup raisins
  • 0.75 cup semi-sweet chocolate chips
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, using a hand mixer or stand mixer on medium speed for about 2 minutes.

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, baking soda, and salt.

Step 5

Gradually mix the dry ingredients into the wet ingredients, stirring just until combined.

Step 6

Fold in the rolled oats, raisins, chocolate chips, and walnuts (if using). Ensure the mix-ins are evenly distributed throughout the dough.

Step 7

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 8

Bake in the preheated oven for 9–11 minutes, or until the edges are golden brown and the centers look just set.

Step 9

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies warm or store in an airtight container at room temperature for up to a week.
