Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chiles, undrained
  • 1.5 cups enchilada sauce
  • 2 tablespoons taco seasoning
  • 6 medium flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 2 tablespoons olive oil
  • 0.5 cup sour cream (for serving, optional)
  • 0.25 cup cilantro, chopped (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a wooden spoon.

Step 3

Add the diced onion and garlic to the skillet. Cook for 3-4 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

Step 4

Stir in the taco seasoning, black beans, corn, diced tomatoes with green chiles, and 1 cup of enchilada sauce. Mix well and let simmer for 5 minutes. Remove from heat.

Step 5

In a 9x13-inch baking dish, spread a thin layer of the remaining enchilada sauce (about 1/4 cup) to coat the bottom.

Step 6

Place two tortillas on the bottom of the dish, slightly overlapping them to cover the base. Spread a layer of the beef mixture over the tortillas and sprinkle with 1/3 of the shredded cheese.

Step 7

Repeat the layering process two more times: tortillas, beef mixture, and cheese, ending with a layer of cheese on top.

Step 8

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes.

Step 9

Remove the foil and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 11

Garnish with chopped cilantro and serve with sour cream, if desired. Enjoy!
