Ingredients

  • 3 cups Cooked shredded chicken
  • 12 pieces Flour or corn tortillas
  • 2 cups Shredded cheese (cheddar or Mexican blend)
  • 3 cups Enchilada sauce
  • 1 cup Diced onion
  • 0.25 cup Chopped fresh cilantro
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 tablespoon Vegetable oil (for greasing the pan)
  • 0 optional Sour cream (for serving, optional)
  • 0 optional Sliced jalapeños (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the shredded chicken, 1 cup of shredded cheese, diced onion, garlic powder, cumin, chili powder, and chopped cilantro. Mix well to evenly distribute the seasonings.

Step 3

Grease a 9x13-inch baking dish with vegetable oil to prevent sticking.

Step 4

Spread 1/2 cup of enchilada sauce evenly across the bottom of the baking dish.

Step 5

Lay a tortilla flat and spoon about 1/4 cup of the chicken mixture into the center. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and chicken mixture.

Step 6

Once all the tortillas are in the baking dish, pour the remaining enchilada sauce evenly over the top, ensuring all the tortillas are covered.

Step 7

Sprinkle the remaining 1 cup of shredded cheese over the top of the enchiladas.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 9

Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the enchiladas from the oven and let them cool for 5 minutes before serving.

Step 11

Optional: Top with sour cream, sliced jalapeños, or extra cilantro for garnish. Serve warm and enjoy!
