Ingredients

  • 250 grams dried rice stick noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 medium bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon dark soy sauce (optional, for deeper color)
  • 1 teaspoon brown sugar
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro, chopped
  • 2 stalks green onion, chopped
  • 2 tablespoons crushed peanuts (optional, for garnish)
  • 200 grams protein of choice (shrimp, chicken, tofu, etc.), cooked

Directions

Step 1

Soak the rice stick noodles in warm water for 20-30 minutes until softened. Drain and set aside.

Step 2

In a small bowl, whisk together the soy sauce, oyster sauce, dark soy sauce (if using), brown sugar, and lime juice. Set the sauce aside.

Step 3

Heat a large wok or skillet over medium-high heat and add the vegetable oil.

Step 4

Add the minced garlic to the hot oil and stir-fry for 30 seconds until fragrant.

Step 5

Add the julienned carrot and sliced bell pepper to the wok. Stir-fry for 2-3 minutes until slightly softened.

Step 6

Toss in the bean sprouts and stir-fry for an additional minute.

Step 7

Add the drained rice stick noodles to the wok along with the sauce mixture. Toss everything together gently to combine and ensure the noodles are evenly coated in the sauce.

Step 8

If using cooked protein, add it to the wok and stir-fry for 1-2 minutes to warm it through.

Step 9

Remove the wok from heat and sprinkle the dish with chopped cilantro and green onions.

Step 10

Serve immediately, garnished with crushed peanuts if desired.
