Ingredients

  • 3 medium zucchini
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 as needed nonstick cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with nonstick cooking spray.

Step 2

Wash the zucchinis thoroughly and trim off the ends. Cut each zucchini into sticks, approximately 3 inches long and 1/2 inch thick.

Step 3

Set up a breading station with three shallow bowls: one with the flour, the second with the eggs and water whisked together, and the third with breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper mixed together.

Step 4

Take one zucchini stick and coat it in the flour, shaking off any excess. Dip it into the egg mixture, letting the excess drip off, and then roll it in the breadcrumb mixture until fully coated. Place the coated zucchini stick on the prepared baking sheet. Repeat with the remaining sticks.

Step 5

Once all zucchini sticks are coated and arranged on the baking sheet, lightly spray them with nonstick cooking spray. This will help them achieve a golden, crispy finish.

Step 6

Bake the zucchini sticks in the preheated oven for 18–20 minutes, or until they are golden brown and cooked through. Turn them halfway through baking to ensure even crispiness.

Step 7

Remove from the oven and let them cool slightly before serving. Enjoy with your favorite dipping sauce, such as marinara or ranch, if desired.
