Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning
  • 1 can diced tomatoes with green chilies (e.g. Rotel)
  • 1 cup corn kernels (fresh, frozen, or canned, drained)
  • 1 can black beans, rinsed and drained
  • 4 cups tortilla chips, lightly crushed
  • 2 cups shredded Mexican blend cheese
  • 0.5 cup sour cream
  • 2 stalks green onions, sliced
  • 0.25 cup fresh cilantro, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 6–8 minutes. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet and cook until the onion becomes soft and translucent, about 3–4 minutes.

Step 4

Stir in the taco seasoning, diced tomatoes with green chilies (including their liquid), corn, and black beans. Simmer for 5 minutes, stirring occasionally.

Step 5

In a 9x13-inch baking dish, spread half of the crushed tortilla chips evenly across the bottom.

Step 6

Spoon half of the meat mixture over the chips, spreading it out evenly. Sprinkle 1 cup of shredded cheese on top.

Step 7

Repeat the layering process using the remaining chips, meat mixture, and cheese.

Step 8

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and let it cool for a few minutes. Dollop the sour cream on top and sprinkle with sliced green onions and cilantro, if using.

Step 10

Serve warm and enjoy Nat's Nacho Casserole with extra tortilla chips or your favorite toppings!
