  • 3 tablespoons Cornstarch
  • 2 large Egg yolks
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a medium saucepan over medium heat, combine the crushed pineapple (with its juice) and granulated sugar. Stir gently to dissolve the sugar.

In a small bowl, whisk together the cornstarch and 1/4 cup of water until smooth. Gradually add this mixture to the saucepan, stirring constantly to prevent lumps.

In another small bowl, lightly beat the egg yolks. Temper the yolks by adding a small amount of the hot pineapple mixture into the yolks while whisking quickly. Once combined, pour the tempered yolks back into the saucepan, stirring continuously.
