Ingredients

  • 16 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 4 cups whole milk
  • 1 cup heavy cream
  • 3 cups sharp cheddar cheese, shredded
  • 1 cup gruyère cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil
  • 2 tbsp parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

Bring a large pot of salted water to a boil. Cook the elbow macaroni until al dente according to package instructions, usually around 7-8 minutes. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 4

Gradually pour in the milk and heavy cream, whisking constantly to avoid lumps. Cook for about 5-7 minutes, until the mixture thickens slightly.

Step 5

Reduce heat to low and stir in the sharp cheddar, gruyère, and parmesan cheeses until melted and smooth. Mix in the Dijon mustard, paprika, salt, and black pepper.

Step 6

Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated.

Step 7

Transfer the macaroni and cheese mixture to the prepared baking dish, spreading it evenly.

Step 8

In a small bowl, combine the panko breadcrumbs and olive oil. Sprinkle this mixture over the top of the macaroni.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the breadcrumbs are golden brown and the mac and cheese is bubbling.

Step 10

Remove from the oven and let cool for 5 minutes before serving. Garnish with chopped parsley, if desired. Enjoy!
