Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 28 ounces canned whole peeled tomatoes
  • 2 cups vegetable or chicken broth
  • 1 teaspoon granulated sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 0.5 cup heavy cream
  • 2 tablespoons fresh basil leaves, chopped

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the diced onion and sauté for 5 minutes, or until translucent.

Step 3

Stir in the minced garlic and cook for another 1 minute, until fragrant.

Step 4

Pour in the canned whole peeled tomatoes along with their juices and use a wooden spoon to gently crush the tomatoes.

Step 5

Add the vegetable or chicken broth, sugar, salt, and black pepper. Stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 20 minutes, stirring occasionally.

Step 7

Remove from heat and carefully use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a traditional blender, but be cautious as it will be hot.

Step 8

Return the soup to the pot if needed, and stir in the heavy cream until well combined.

Step 9

Taste and adjust the seasoning with additional salt or pepper, if desired.

Step 10

Ladle the soup into bowls, garnish with the chopped fresh basil leaves, and serve warm.
