Ingredients

  • 20 oz frozen chopped spinach
  • 8 oz cream cheese
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 small onion
  • 2 garlic cloves
  • 2 eggs
  • 1 cup breadcrumbs
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp ground nutmeg

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x9-inch casserole dish.

Step 2

Cook the frozen spinach according to package instructions. Drain thoroughly to remove excess water and set aside.

Step 3

In a large skillet over medium heat, melt the butter. Add the finely chopped onion and sauté for 3-4 minutes until soft and translucent. Add the minced garlic and cook for another 1 minute until fragrant.

Step 4

In a large mixing bowl, combine the sautéed onion and garlic with the cooked spinach, cream cheese, sour cream, and shredded cheddar cheese. Mix until well combined.

Step 5

Crack the eggs into the spinach mixture and stir until fully incorporated. Add the salt, black pepper, and ground nutmeg, mixing thoroughly.

Step 6

Pour the spinach mixture evenly into the prepared casserole dish.

Step 7

In a small bowl, toss the breadcrumbs with 1 tablespoon of melted butter (optional, for extra flavor). Sprinkle the breadcrumb mixture evenly over the top of the casserole.

Step 8

Bake the casserole in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbling slightly along the edges.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Enjoy!
