  • 0.5 teaspoon Salt
  • 0.5 cup Brown sugar, packed (for frosting)
  • 3 tablespoons Unsalted butter (for frosting)
  • 3 tablespoons Milk (for frosting)
  • 1 cup Powdered sugar, sifted (for frosting)
  • 0.5 teaspoon Maple extract (for frosting)

Directions

Step 1

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and 1 cup of brown sugar until light and fluffy.

Step 3

Add pumpkin puree, egg, and vanilla extract to the creamed mixture. Beat until smooth and fully combined.

Step 4

In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Do not overmix.

Step 6

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the cookies spring back when lightly touched.

Step 8

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

To make the frosting, melt 3 tablespoons of butter in a small saucepan over medium heat.

Step 10

Stir in 0.5 cup of brown sugar and 3 tablespoons of milk. Cook while stirring until the mixture begins to bubble.

Step 11

Reduce heat to low and simmer for 1-2 minutes, stirring constantly. Remove from heat and let cool for 5 minutes.

Step 12

Whisk in the powdered sugar and maple extract until smooth and creamy.

Step 13

Spread the frosting over the fully cooled cookies with a spatula or spoon.

Step 14

Let the frosting set for at least 15 minutes before serving. Enjoy your delicious, fall-inspired cookies!
